As my husband declared after a few sips of beer, "Ahh, a perfect choice." Well, actually, it was the only choice on this warm, July 4th afternoon. Connected to the Hilton Hotel, Rare was one of very few side street restaurants open on this holiday. We had been biking for several hours and were desperate to be indoors and have something to eat. Rare's reputation is for their meats - steaks (rib eye, NY strip, steak au poivre) and their grand selection of hamburgers, either made with ground rib eye or a blend of other steakhouse cuts. My husband chose from the category that included hamburgers flambeed with either Jameson, bourbon or tequila. My "burger" exceeded my expectations. The "vegetarian meltsation" had avocado, portobello, roasted red pepper, arugula and melted brie all tucked between two lightly breaded slices of eggplant. It was a good meal for both of us. Before we got back on our bikes we went up to the 23rd floor to check out the rooftop bar. Now we have two reasons to return. My husband would like to sample another hamburger and it would be fun to take members of the Manhattan Sideways team upstairs to share in the view of the city.

Birreria

As of March 2022, Eataly's rooftop bar Birreria has been turned into the pop-up SERRA. The rooftop of Eataly changes its concept each season. In 2016, for example, the sky-high spot transitioned from the beer-centric Birreria to a sea-side-themed rooftop bar called Sabbia. Each reincarnation of the bar is equally impressive, which comes as no surprise after visiting Eataly downstairs. Birreria was a sky-high brewery where Fred Avila, the head brewer, created beer in-house for three or four days out of every week. I had the pleasure of sitting down with Fred and talking to him about his experience brewing above Eataly’s impressive food palace. Fred has been working for Eataly since 2011, but he started home-brewing in 2007. He has become a master at blending different flavors together and was proud to tell me about Birreria’s two seasonal beers. Vera is a summery beer with hints of lavender and blood orange, whereas the Wanda is a dark, mild beer for the fall and winter, with a lightly roasted flavor. Fred is very attuned to the weather when he drinks beer. When I asked if he has a favorite, he said that it changes with the seasons and the forecast, though he did admit, “I love to drink Oktoberfest beers. ” He featured obscure sours and saisons (pale ales specifically brewed for warm weather) in the summertime and interesting stouts in the fall. “People used to just drink IPAs or Pilsners, ” he explained to me. It is clear that working in the beer world has become considerably more exciting. Birreria collaborated with a collection of external breweries, including Dogfish Head, a microbrewery based out of Delaware. Because Birreria was part of Eataly, the list of collaborators also included two Italian companies, Birra del Borgo and Baladin. The founder of Baladin, Teo Musso, is considered the “godfather of the Italian brewing movement, ” Fred informed me. He also let me know that he always liked to have one or two New York beers available. The food menu was no less impressive, especially since it was made entirely using produce from downstairs. Unlike other parts of Eataly, however, Birreria often strayed from Italian cuisine. For example, Fred told me about a mozzarella-stuffed quail, which sounds more Northern European than Italian. Everything on the menu was designed to pair well with the bar’s unique selection of beers, creating a perfect culinary balance. I visited Sabbia shortly after it opened in 2016. It was like a taste of the tropical seaside in the middle of Manhattan: Imagine listening to the Beach Boys and sipping on one of their signature summer cocktails while lounging on a beach chair in the cabanas. The menu is filled with seafood specials that continue the seaside resort theme. It is the perfect summer spot for those who cannot leave town, and there is a retractable roof for rainy nights.

American Whiskey

“Liquor-wise, whiskey is the greatest expression of America. ” So said Jessica, bar manager at American Whiskey at the time that I visited. Opened in September 2013, the bar immediately attracted a large industry following with its nearly two hundred varieties of bourbons and rye. The bar is more versatile than that, however, with a southern, French-inspired food menu and full bar to complement, because, as Jessica says, “even us cocktail nerds want a beer and a shot sometimes. ” Here, highbrow meets reality. Tans and grays line the space, with rough distressed wood showing through. Numerous flat screens are generously located throughout the bar, between giant busts of beasts. Following our conversation with Jessica, we spoke with Casey, an owner of American Whiskey. As simple as the story is, we found it fascinating and truly applaud the dedication that it took for a bunch of friends to follow their dream. Between the five managing partners, they have trained behind the bar, managed a restaurant, cooked and even washed dishes – “you name it, we have done it, ” Casey, told us. “We always knew that our end goal would be to open our own place. Once we graduated college and began to mature a bit, we got out of the beer mode and moved into the more refined and sophisticated world of alcohol. ” Their vision from the beginning was to find a space large enough to accommodate their sport-themed bar, as they are avid fans of multiple games. One of the partners is a University of Georgia graduate, and managed to bring in several hundred Georgia football enthusiasts on a recent weekend. Casey said the place was electric. Mimicking the theme of a vodka service, the guys came up with “barrel service. ” Served right at the table are buckets of ice, glasses and one or three liter barrels, which are whiskey-based with a variety of mixers, ready to drink. Duane, one of the several in-house whiskey experts, spent time with us sharing his passion for Bourbon. It was quite interesting to hear him speak of his experience in Kentucky, this past spring, when a few of the partners went on a trip to gain further knowledge. “What better place to go than right to the state that is famous for this, ” Duane said. However, he did go on to tell us that there are a number of states that manufacture their own whiskies – Iowa, Oregon and Montana were a few mentioned. Duane chatted about the surrounding landscape where the whiskey is produced, saying “it breathes into the barrels” and emphasized the importance of the water source – “all combined, it makes for an outstanding whiskey. ” The enthusiasm for the drink was contagious. Having only had tiny tastes over the years, I broke down and took a few sips of Duane’s signature “Strike Me Dead. ” Templeton Rye (dating from the Prohibition), black pepper, maple syrup and maple bitters were combined and finished off with some orange zest and cloves. The result was powerful and flavorful. Following that, I tried Duane's other favorite drink, “Floral Collins, ” consisting of Fords gin, cucumber juice, lavender syrup, fresh squeezed lime juice, maraschino liqueur and a slice of cucumber. Esteban, our photographer, was asked which concoction he preferred and answered that they had, “Equal goodness. ” Duane has spent the last three years living and breathing whiskey. Although incredibly conversant on the subject, he describes himself as being “humble” and said that he is simply dedicated to delivering the message of our country’s whiskey, “the voice of reason. ”

Home to more than 750 whiskeys, the Flatiron Room is an enthusiast's delight... but it is also a nice place for a change of pace for the whiskey amateurs among us. After spending some time in the more typical Manhattan bar scene, this more low-key, conversational venue can be just what the doctor ordered (all things in moderation, of course). Walking in, we were immediately struck by the colored lighting, adjusted throughout the night, and the beautiful stage hung with lush velvety curtains. The main room is candlelit and brings to mind a theater, caf̩e, bar and library all rolled into one. Each evening, a band takes the stage to play live music, typically jazz. Thursdays, however, are devoted to Cuban music for those who crave a bit more rhythm, while Sundays are bluegrass and bourbon night. Among the deluge of whiskeys, ryes, bourbons and scotches, it can be hard to hone in on favorites. For those who do decide what suits their fancy, the Flatiron Room offers a bottle key program, whereby bottles are available to be opened one night, and stored for future visits. A sommelier schools old hands and the uninitiated alike on Tuesdays. Although the emphasis is on the alcohol and music, the food is also worth mentioning. The menu is eclectic with a charcuterie or cheese plate, an interesting variety of flat breads, salads, spicy broccoli (a favorite), and an array of main dishes. For those looking for a bit more privacy or some shelter from the musical stylings, there is a mezzanine sporting tables and additional private rooms in the back. These seats, and most of the house, are by reservation only, with a few spaces for walk-ins. Calling ahead is a good idea. Coming at all is an even better one.

The Manhattan Sideways Team was impressed from the moment we walked through the airy, plant-lined, street-side terrace into the sleek, colorful lobby. Framed by the orange-and-silver paneled wall behind them, two receptionists beamed and waved at us from a desk that emanated a glowing, purple light. The manager of the hotel informed us that the reception staff double as concierges: they are savvy New Yorkers with an encyclopedic knowledge of the city that will serve any tourist extremely well. “We hire people not just for their experience, but for their passion, ” he said. As we went up to the seventeenth floor to check out the room facilities, we caught a beautiful view of the Empire State Building through the windows in the hallway. Location is one of Innside’s biggest draws: In addition to the iconic building, Innside is in walking distance from the High Line, Times Square, and Broadway - Perfect for any tourist. The room we visited had a German-inspired aesthetic that is elegant, modernist, and eminently functional. Everything was clean and white (barring a pair of funky yellow cushions) with ambient lighting, USB outlets, an espresso machine, a complimentary non-alcoholic minibar, and, of course, gorgeous views of the New York skyline. In addition to conference rooms, Innside boasts Google-style “creative rooms” for social or business gatherings geared towards ideas and innovation. These rooms feature fun and colorful décor, comfortable furniture, fitness balls, high tech SMART boards, built-in audio-visual equipment, and an all-inclusive mini-bar and coffee station. To top it all off, Innside manages the restaurant Impero Caffe, which is headed by award-winning celebrity chef Scott Conant and offers outstanding, rustic Italian cuisine.

A placard marking the Chelsea Hotel's landmark status reads, “The Chelsea was opened in 1884 as one of the city’s earliest cooperative apartment houses. It became a hotel about 1905... Artists and writers who have lived here include Arthur B. Davies, James T. Farrell, Robert Flaherty, O. Henry, John Sloan, Dylan Thomas and Thomas Wolfe. " One of the most important buildings in all of New York in the last Century, The Chelsea, with its bright red exterior and ornate iron balconies, still stands tall today. The past may never come back, but the new owners of this incredible landmark have told all of the long-time current residents of the hotel that he wants to restore the feel that the hotel had in the 1960s, just without all of the drugs and drama. The original owner, Stanley Bard, should take full credit for making it famous, gave musicians and other artists a place to live when no one else would. He “trusted everyone, ” and “understood all of the artists that lived and stayed here, ” according to Dan Courtenay, a resident of the hotel and owner of Chelsea Guitars on the ground floor - Bard appreciated what Manhattan was all about, he “was the heart of the place. ” The Chelsea hotel is where Andy Warhol threw an assassination party after the death of JFK -- where many Titanic survivors took refuge in 1912 -- where Betsy Johnson created the mini skirt -- Mark Twain, Jack Kerouac, Mark Rothko, James Schuyler, Arthur C. Clarke, Bob Dylan and Leonard Cohen all spent time at this hotel, walking its hallways and working on their art. Today, the ghosts of former tenants are said to roam the halls, and the hotel gives off an air of mystery and fame.

Jimmy, who also owns the bars O’Donoghue’s and Genesis, was not quite sure what the bar would become, but he was already excited by the crowds that had arrived. He sees the area as an up-and-coming neighborhood, and has been delighted to meet a lot of locals, which is a change from the tourist-heavy crowds that he experiences in Times Square. With a happy hour from 4pm-7pm on weekdays, the bar draws in a solid after-work crowd. It is not surprising that people are gravitating to the Ale House, with people like Jimmy at the helm. Like many other Irishmen, Jimmy grew up working in a bar. He had his first job filling pints at the age of seventeen. He went on to reminisce how “There were no cocktails – just pints, " but then stated, "It’s changing all the time. ” He told me how at Crompton he is serving local and seasonal beers, in order to keep up with what people are drinking. He was especially proud of the special beer of the house, Crompton Ale, an IPA from upstate New York. According to Jimmy, however, the real reason for the bar’s early success is “the standard of service and the quality of food. ”

The Smith

Having grown up in Manhattan, Jeffrey Lefcourt knew the area well. Having been around restaurants since his summers as a busboy in high school, he also knew the industry well. Therefore, when he decided to open The Smith in 2007, a venture preceded by his founding of the restaurant Jane in 2001, he knew what he wanted. “It had to be accessible with high-quality food, ” Jeff reasoned. Nine years later he was onto his fourth location, this time in Nomad, on Broadway with an entrance on a side street. When I visited on a casual Wednesday afternoon in the summer of 2016, just months after its opening, the three-hundred-seat restaurant was nearly at capacity. “It’s really become an amenity for the neighborhood, ” Jeff explained, comparing the timelessness of his establishments to a favorite pair of blue jeans. He later showed me that the new location was already the eighth most-booked New York City restaurant on Open Table. Numbers one and two? The Smith - Lincoln Center and The Smith - Midtown. The Nomad crowd was embracing a comfortable and classic ambience set by the wooden-slabbed ceiling, black-and-white mosaic patterned floor, and sunlight pouring through the wide-opened doors, accented to peak brightness by custom light fixtures. There is a massive bar shelving one of the largest alcohol collections I have seen, with another one intimately situated in a private room reserved for special festivities. Downstairs, there is a photo booth awaiting guests wanting to document their experience with friends or family. In the kitchen, the fires burned high, tantalizing scents fumed, and the large staff was motivated by a booming voice that reverberated orders as they came through. “Fish sandwich at the bar with French fries, ” said the man behind the voice as the cooks kept to their rhythm, each invested in the plates that would soon walk out the door. “It takes a lot of people, ” Jeff smiled. Nearly everything on the menu is made from scratch, and the French fries alone require hours and hours of peeling, cutting and frying to have them just right. Admittedly Jeff’s favorite item on the menu, this crispy side accompanies the Burger Royale, a double patty burger so beloved in Nomad that it was introduced to all locations. The facial expression of our photographer, Tom, once he took his first bite said it all. The vegetarian Vegetable Bibimbap, the vibrant Seared Tuna Salad, and The Royale, an illustrious triple-tiered raw bar platter, each stand on their own. Plated on a bed of charred corn with summer greens, the Mahi Mahi offers refreshing seasonality in the summertime, and the spoonable, skillet roasted Mac and Cheese starter garners the most circulation on Instagram. A standout from the bar was the Moscow Mule on tap. The successes of The Smith restaurants lie not only in their inviting environments, complimentary purified water, drinks on tap, or comforting cuisine sourced from local farmers and fishermen, but also in their commitment to authentic service. “The Smith is a maker. We are making experiences, ” Jeff reinforced, “…It is all about giving people what they are looking for and connecting with them. ” When guests were upset that the winter salad did not make it onto the springtime menu, a slightly tweaked seasonal version was added. The adjustment became so popular that Jeff was afraid to take it off the menu. It is exactly that adaptability that enables the affable owner to perform his favorite part of the job each day - “making people smile. ”

The founder of Baladin, Teo Musso, is considered the “godfather of the Italian brewing movement, ” Fred informed me. He also let me know that he always liked to have one or two New York beers available. The food menu was no less impressive, especially since it was made entirely using produce from downstairs. Unlike other parts of Eataly, however, Birreria often strayed from Italian cuisine. For example, Fred told me about a mozzarella-stuffed quail, which sounds more Northern European than Italian. Everything on the menu was designed to pair well with the bar’s unique selection of beers, creating a perfect culinary balance. I visited Sabbia shortly after it opened in 2016. It was like a taste of the tropical seaside in the middle of Manhattan: Imagine listening to the Beach Boys and sipping on one of their signature summer cocktails while lounging on a beach chair in the cabanas. The menu is filled with seafood specials that continue the seaside resort theme. It is the perfect summer spot for those who cannot leave town, and there is a retractable roof for rainy nights.

In January of 2007, Oscar Farinetti founded the first Eataly in Turin, Italy, specializing in quality Italian goods. Under B& B Hospitality, the marketplace has since expanded throughout the United States. The first New York City location opened in the summer of 2010 near the iconic Flatiron building, and an expansion has been planed in the Financial District for 2016. Strolling through the epicurean haven, I saw a dazzling array of artfully displayed gourmet products. The produce section alone reaped multiple varieties of earthy mushrooms, vibrant stone fruits, and luscious greens. The cotton candy grapes and sea beans were astoundingly similar in flavor to their namesakes. Other sights included a traditional espresso bar, a butcher counter with cuts from sustainable farms, and a station entirely devoted to making mozzarella, turning out two to three hundred pounds daily. Above, ornate ceilings accentuated these wonders, paying homage to the building’s previous life as a luxury hotel. “Eataly is the gallery, the producers are the artists, and the products are the art, ” explained Italian-born Dino Borri, Eataly’s brand ambassador. He got his start working under the founder of the Slow Food movement, Carlo Pertrini, at the age of fourteen, eventually helping to open an Eataly branch in Japan. He is now based in New York as a major product buyer. He still, however, visits Italy frequently. The gallery analogy is a perfect metaphor, especially since Eataly advocates for small businesses by clearly crediting them with their products and financially sponsoring projects to accelerate capacity growth. “The majority of our products come from Italy, but we also get some locally, ” Dino told me. Some of the local sourcing has to do with shipment restrictions - salami and unpasteurized cheese are not allowed to cross over the borders, but primarily the goal is to find the freshest ingredients. One of the benefiters from Eataly's work with local businesses has been Wild Hive Farm, a small farm from Upstate New York with organic, stone-ground bread. GuS Soda also met immense popularity after hitting Eataly’s spotlight, and local farmers turn to the marketplace for a steadier income source than farmers’ markets. However, it is not just the labeling of product origins that keeps shoppers at Eataly informed. Cooking classes are offered regularly at La Scuola, recipes are provided with many of the meals, and various signs give product tips and facts. “The olive oil expert can go on for over twenty minutes in a discussion of delicate, grassy, and herbaceous varieties, ” stated PR Associate Brianna Buford, “he knows the proper tasting techniques. ” I am sure the vinegar expert is just as well trained. Passing by the highly specialized eateries, my cravings constantly wavered between savory and sweet. The newest edition when I visited in the summer of 2015, the Nutella bar, features a constantly running chocolate hazelnut fountain, ready to be poured on a bounty of appetizing creations. In the bakery section, I learned that all the hearth-baked breads come from the same “mother yeast. " Nearby, serving some of the best pasta and perfectly charred Napoli-style pizza pies in Manhattan is La Pizza & La Pasta. During my discussion with Dino, he told me, "We really made this store for ourselves. " He declared himself a primary customer for Eataly, saying, “We are what we eat. ” It is less about the fancy products than about having everything be “good, clean, fair, ” and having something for every price point. “We have introduced a new way of eating, ” he smiled. He is glad that others have begun to mimic Eataly's highly successful marketplace model, since it means increased quality for everyone. While spending hours touring Eataly, I sampled the food at some of the eateries. A favorite was the zucchini Carpaccio with fried capers, toasted pine nuts, soft white cheese, and fresh mint at Le Verdure, a veggie-centric eatery that has been a go-to place for me since it first opened. After trying the Pesce Crudo Trio, including raw pink snapper, swordfish, and steelhead trout, from Il Pesce, my photographer, Tom, exclaimed, “this is fresher than the fish my dad caught and cooked last night. ” The Manhattan Sideways Team finished off with a necessary treat at Il Gelato. By providing quality flavor, supporting small farmers and educating shoppers, Eataly has truly maximized their slogan “Eat. Shop. Learn. ”
