When chatting with David Santos at his brand new restaurant, Louro, he explained that his primary focus is to serve excellent food without breaking your bank. “People want great food and should be able to get it, even in today’s economy,” Chef Santos told us. Opening a restaurant serving quality-driven food that everyone can enjoy in a comfortable environment is what he feels his restaurant is all about. However, the essence of Louro is equally about having fun creating and enjoying food. After stints at Bouley and Per Se, Chef Santos focused on just that at his popular supper club, Um Segredo. Held several times a week at his own home on Roosevelt Island for almost a year, he cooked delicious, creative meals with themes like “all spicy dishes” or “inspired by Truman Capote’s life.” The supper club feeling is kept alive at Louro with BYOB-themed dinners on Monday nights. Chef Santos works diligently to source the freshest quality and most interesting ingredients. He shared his sentiments with us, “The quality should be serious, but have fun with inspiration from wacky things that catch your eye.” He wants people to have a sense of humor and likes that guests try to guess the theme of his next Monday night dinner. He describes his menu as new-American cuisine with worldly influences and is always changing it, experimenting with new items.
