Stepping in past a storefront of juggernaut cakes, one enters the delightful, wonderland workshop of Cake Alchemy. Here, owner Lauri, and her assistant, Ana, work together to produce culinary masterpieces fit for everything from children's parties to weddings to celebrity events. In a short glance around the shop, one quickly turns to question what in the store isn't edible: a drooping bulldog, a fast food serving of a hamburger and french fries, and an imitation of "Cupid & Psyche." Indeed, it appears that Lauri's cake crafting skills are as limitless as her imagination.
After working as a pastry chef for twenty years, Lauri turned to making cakes while teaching at the French Culinary Institute in Manhattan. While her craftsmanship is impeccable, Lauri maintains that she is "a chef first, and an artist second," emphasizing that all of her cakes are made from scratch and that she does not 'cheat on ingredients.' While she admits to drawing inspiration from certain artists - "I love the work that Koons produces" - most of her creations are driven by the ideas or requests of her private clients. Lauri also hosts a number of classes "specialized in the science of confectionery design," which include items from cupcake decorating for kids, to an intensive five-day wedding cake production course. The Sideways team needed only one bite to reach their conclusion; vanilla cake made of 83% European butter was incredible.
