I remember the day that Eli’s expanded to the East 90s. My grandmother was living right nearby, so we headed straight over there together. It was a phenomenon in the neighborhood. Today, The Vinegar Factory has become a staple for those who live in the area and can take advantage of the vast market and café from Eli Zabar – the youngest son of the founders of Zabar’s and the owner of E.A.T. and Eli’s Bread. Along with filling the need for a marketplace in the east 90s, the Vinegar Factory is a great example of a business that tries to avoid waste. The old bread and fruit are recycled into confectionaries and condiments, and the hot air from the bakery ascends to the rooftop greenhouse where vegetables are grown. Though the upstairs café is only open for weekend brunch, there is an extensive salad bar and hot food on the main floor with casual small, round tables and chairs where diners can sit and enjoy their treats.
In November 2016, the Vinegar Factory closed. After renovations, it will remain closed to the public and become a commissary kitchen and home grocery delivery center.
